  • The final site plan for an In-N-Out Burger was approved by the Centerville City Council. The popular fast food chain will be built on 1.5 acres at 475 N. 700 West in Centerville. Mark Noack with Greenborough Farrow Architecture is the applicant. Construction on the building is scheduled to begin this summer.

  • Carlsbad, CA – Rubio's Fresh Mexican Grill will open its seventh location in Utah Thursday, Feb. 18, in the University Festival Shopping Center, 530 E. University Parkway in Orem. The San Diego-based chain is introducing a new, more upscale design at its Orem restaurant, featuring a rich sensory experience of aromas, exhibition cooking, music and decorative patterns that compliment the complex flavors of Rubio’s food.

  • (Daily Herald) After having four and a half successful years as a business in Salem, one local pizza shop has expanded, opening their second location in Santaquin. Papa Kelsey's Pizza and Subs opened their doors for business on December 16, but held their official ribbon cutting and grand opening on Thursday, January 21st.

    Mike and Terri Jenkins, residents of Salem for the past sixteen years, are excited about the new opportunities they will have in Santaquin.

  • (The Enterprise) Copper Onion, a new contemporary American restaurant, is scheduled to open mid-January at 111 E. Broadway in downtown Salt Lake. Ryan Lowder, owner and manager, spent the last seven years in New York City, operating Spanish and Italian restaurants. He also formerly had a restaurant in Barcelona. He says Copper Onion will serve regional-driven cuisine, some with a French twist and Spanish influence. Entrees will typically be under $20, while appetizers and side dishes should be in the single digits, Lowder explains.

  • (Daily Herald) A little bit of California made its way to Orem on Thursday as hundreds of mostly college-aged customers mobbed the new In-N-Out Burger restaurant at 350 E. University Pkwy.

    Some who had long awaited the arrival of the venerable Golden State culinary and cultural institution came the night before; some camped out. But most turned out around the lunch hour to whet their appetites at one of In-N-Out's first two Wasatch Front locations.

  • SALT LAKE CITY (Fox 13) - The Red Iguana restaurant has become an icon of Salt Lake City's west side. The popularity of the place has also lead to long lines for those hoping for delicious Mexican fare. Loyal customers often wait up to an hour or so for a table during the lunch or dinner rush. But a second location is nearing completion. "This tiny kitchen serves 900 meals a day," says owner, Lucy Cardenas. As the Red Iguana fame grew, Cardenas started to think of expanding. But rather than opening in some far flung valley location, she chose just a few blocks away.

  • The American Fork Planning Commission approved a site plan for Chick-Fil-A . It will be located at 183 N. West State Road. The building will be 4,100 square feet in size and will seat 94 patrons. Ensign Engineering is the engineer on the project.

  • The design review for a Chick-Fil-A was approved by the Logan Planning Commission. The restaurant would be located at 1323 N. Main. Deborah Kerr of Kerr Project Services will be developing the 4,343 square foot building. It will include a drive-thru, inside seating for 1,144 and patio seating for 28. The building will be built on 1.05 acres.

  •  (Salt Lake Tribune) The Counter gourmet burger restaurant in Salt Lake City has closed.

    The outlet had been the Los Angeles-based chain's first and only Utah store when it opened at The Gateway in fall 2008.

    A chain representative did not return messages left Wednesday, but Erkelens and Olson Auctioneers said it will offer the restaurant's equipment for sale at 10 a.m. Oct. 29 at 188 S. Rio Grande St. A sale preview is set from 10 a.m. to 4 p.m. Oct. 28, according to the auctioneer's Web site.
