Contemporary American restaurant to open in downtown Salt Lake
(The Enterprise) Copper Onion, a new contemporary American restaurant, is scheduled to open mid-January at 111 E. Broadway in downtown Salt Lake. Ryan Lowder, owner and manager, spent the last seven years in New York City, operating Spanish and Italian restaurants. He also formerly had a restaurant in Barcelona. He says Copper Onion will serve regional-driven cuisine, some with a French twist and Spanish influence. Entrees will typically be under $20, while appetizers and side dishes should be in the single digits, Lowder explains. There will be seating for 30 to 40 outside during the summer months and 90 inside, including a private dining room for 12 to 14 guests. The restaurant will be open six days a week, for dinner only at first, but gradually expanding into lunch as well. Lowder’s wife, Colleen, the former evens and service manager at the Oyster Bar in New York’s Grand Central Station, will serve as general manager.
