Red Iguana expands with another building
SALT LAKE CITY (Fox 13) - The Red Iguana restaurant has become an icon of Salt Lake City's west side. The popularity of the place has also lead to long lines for those hoping for delicious Mexican fare. Loyal customers often wait up to an hour or so for a table during the lunch or dinner rush. But a second location is nearing completion. "This tiny kitchen serves 900 meals a day," says owner, Lucy Cardenas. As the Red Iguana fame grew, Cardenas started to think of expanding. But rather than opening in some far flung valley location, she chose just a few blocks away.
